Good morning! This week I am sharing a meal that has your nutritional bases all covered while delivering hearty, comforting, maybe even nostalgic flavour. I’m talking about unraveled cabbage rolls. Now, you might be thinking, this feels a bit…wintery. And while I hear you, I am also PASSIONATE about the integration of cabbage, so if I can find a tasty and simple way to infuse some cabbage into the week, I am here for it. Cabbage is an incredible tool to have in your hormone-balancing toolkit, and while it’s beneficial to consume throughout your entire cycle, it’s especially supportive during ovulation. And if you don’t menstruate, know that it is also:
an excellent source of fibre (happy gut!)
is very supportive to the liver and helps our detox pathways work properly thanks to its sulfur compounds
contains sulfurophane, an antioxidant that helps combat oxidative stress, aka makes it an anti-inflammatory food
This meal can be done in one pot/pan, and you can repurpose it in a few ways to enjoy it over a few meals. For example, toss it into an Ezekiel bread wrap or scoop it onto some steamed greens. I took our leftovers and mixed in some roast cauliflower and potatoes. I love meals like this because they are simple, require little prep or many tools, and are so well-rounded nutritionally. I also find myself craving certain meals or foods – cabbage rolls, lasagna, apple pie – but am far too lazy to make the full thing. So consider this a nod to a classic with way less effort or prep time.
