A comforting, perfectly stuffed burrito <3

Hello! After a few weeks of sharing posts that feel like a glimpse inside my journal, I present you with a comforting burrito recipe that, IMO, is better than any burrito I have ordered because of a simple, may I say genius, upgrade – full credit goes to my partner Kyle for this one.
Why I love this in our weekly meal rotation:
It is high protein and boasts a few different types of plant protein, which also translates to being very budget friendly
You can have it across multiple dinners and it is perfect for those evenings where you only have 5 minutes to prep a meal
It boasts tons of diverse fibre (19 or so varieties…!!!), which we looooove for gut health
It takes less than 30 minutes to make with a quick clean up
There’s something just so satisfying about eating a burrito, especially after a long day – consider this a very nutrient dense comfort food
This recipe makes multiple burritos, probably 6 total, which is great if you’re cooking for multiple or you could halve the recipe if you wanted 3 burritos across a few meals. You could of course make a naked burrito sans wrap, but I am quite passionate about the hand-held nature of this quick and easy dins.
